This recipe checks all the right boxes: it includes bacon, pancakes, and both are slathered in Sweet Ontario maple syrup (naturally). It’s also super easy to make, which is a win for everyone.
To get started you will need your favourite pancake recipe (we recommend this All Time Favourite Recipe).
Directions:
- Cook as many slices of bacon as you want to have pancakes. Each slice of bacon will be used in one pancake.
- Prepare your pancake batter.
- Pre-heat your griddle or pan.
- Spread a thin layer of pancake batter on your pan in a long, narrow strip, as long as a slice of bacon.
- Place the bacon on top of the pancake batter.
- Cover bottom layer and bacon with a top layer of pancake batter. Try to keep it thin so you don’t get an overly large pancake.
- When your pancake is puffy, full of bubbles and lightly brown, flip it over.
- Continue cooking until the centre of your pancake is cooked.
- Remove from griddle.
- Slather with fresh butter and maple syrup and serve.
