Maple Recipe

Maple Sweetened Eggnog

If you’re an eggnog lover this recipe will be a sure hit this Christmas! The  maple syrup adds a unique sweetness and a cup of this will taste amazing while snuggled in front of the Christmas tree.

Ingredients:

  • 3 cups milk
  • 1 cup heavy (whipping) cream
  • 4 cloves
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg, plus more for serving
  • 1/2 teaspoon pure vanilla extract
  • 6 egg yolks
  • 1/2 – 3/4 cup maple syrup

Directions:

  1. Combine milk, cream, cloves, cinnamon, nutmeg, and vanilla in a sauce pan and bring to a simmer while stirring frequently..
  2. Whisk egg yolks and 1/2 cup maple syrup until frothy.
  3. Add 1 scoop of the hot milk into the egg mixture, whisking constantly. Continue to add the hot milk in several additions, then pour the egg mixture into the sauce pan with the remaining milk. Continue to whisk as you pour.
  4. Cook for approximately four or five minutes while whisking constantly. Do not simmer (or boil), as this will curdle the eggs.
  5. Once eggnog begins to thicken, remove from heat. Sample and add more  maple syrup for additional sweetness.
  6. Scoop out the whole cloves.
  7. Pour in an air-tight container and chill in the fridge. Serve topped with freshly ground nutmeg.
  8. Enjoy!
