The long hot days of summer are the perfect time to experiment with maple in all your favourite cocktails. Add in some fresh rhubarb and you have a killer margarita recipe, with a maple twist.
Ingredients
- 4 cups diced Ontario rhubarb
- ½ cup water
- ½ cup Sweet Ontario maple syrup
- 4 cups ice
- ⅔ cup tequila
Directions
- Add rhubarb to water in a saucepan, cover and bring to a simmer over medium heat. Simmer until rhubarb turns to mush and releases its juices, about 15 minutes.
- Strain rhubarb mixture (press the pulp to squeeze out as much liquid as possible). Discard pulp and stir maple syrup into juice. Refrigerate rhubarb syrup until cold.
- Place ice into a blender, then pour in tequila and rhubarb syrup. Blend until smooth or until desired consistency is reached.
- Pour into margarita glasses and serve.
